Folks, since it’s my blog’s anniversary week I am in the mood to post as many recipes as I can today but since time is a constraint I must stop at two for today! This is in continuation to the reader choice post – a voting was conducted yesterday on my Facebook page where I asked readers what kind of recipe they’d like to see next on the blog and the maximum number of votes were garnered by the category ‘breakfast’. So here’s another delightful and interesting way to have eggs! If you love marmalade like I do you will definitely like this recipe. When I came across this recipe sometime I instantly bookmarked it and couldn’t wait to try it out. As soon as I got the opportunity I whipped up this sweet breakfast for myself as nobody else likes sweetened food early in the morning. I was completely bowled over by the taste of this omelette which was a great combination of eggs and marmalade. Perfect for those who fancy continental style breakfasts especially with eggs.

I wish I could get better pictures but we had a week of terrible sandstorms followed by dull and bleak weather during which the lighting wasn’t so favourable but I do hope you like the idea of adding marmalade to eggs and that it looks appealing enough for to get up and try it! If you are a very jam kind of a person you could replace the marmalade with the jam of your choice. Try one that is not sugary and synthetic. Homemade jams are the best bet but commercially available ones which are more of a fruit preserve than a sugary blend of thickened fruit juice is a better bet. Instead of orange marmalade you may use any other kind that you like. Whatever you do, don’t add too much as you want a breakfast, not a dessert!

This is perhaps one of the simplest ways of eating eggs if you are bored of the regular omelette or have no time to hard boil or poach one. Even as I type this my mouth is watering for another delicious breakfast with eggs. I am going to try this out real soon, maybe you should too?

A unique way to enjoy eggs, in the form of a omelette with a dash of orange marmalade

Ingredients

  • 2 eggs
  • 1 tablespoon milk
  • salt & pepper to taste
  • 1 tablespoon butter
  • 1 tablespoon orange marmalade, plus extra to garnish

Instructions

  • In a bowl, beat the eggs and milk lightly. Add the salt & pepper to taste.
  • Heat butter in a frying pan, pour the egg-milk mixture and cook the eggs on a medium heat for a few seconds. Spread the marmalade on top and fold the omelette into half.
  • Flip and let cook on the other side. Remove and place on a serving plate. Garnish with more marmalade if desired.
  • Serve hot!
