
Tomato Garlic Chutney
Super yummy tomato chutney with garlic and dried chilli skins for that extra kick is a perfect accompaniment to dosa, idli, appam or even rice

Ingredients
- 6-7 cloves of garlic, minced
- 1/4 cup spring onions, finely chopped
- 1 tablespoon spring onion greens, finely chopped
- 2 dried red chillies
- 1 cup tomatoes, finely chopped
- 1 tablespoon coriander finely chopped
- 2 teaspoons oil
- salt to taste
Instructions
- Place the dried red chillies in a bowl and cover enough boiling water to cover them. Cover the bowl and keep aside for 10 minutes, then drain and chop the chillies
- Heat the oil and saute the spring onion whites and garlic over a slow flame till they are slightly golden in colour
- Add the chopped chillies and salt & saute again
- Add the tomatoes and cook for about 10 minutes over a slow flame till the tomatoes are soft and can be mashed slightly
- Add the chopped coriander & spring onion greens, mix well & turn off the heat
- Serve with accompaniment of choice
