Chicken Malai Kebabs! – What’s not to love?  Ever since the hubs started making them since a couple of years ago, it has become our absolute favourite at home. The kids love it, especially the little one as she cannot handle spice and she enjoys these kebabs so much whenever we make them for parties & gatherings. Well, that is a thing of the past in the current scenario and it will take a while before we begin our get togethers once again. I had shot a video of this recipe last year (May 2020) and you won’t believe it but it has taken me almost a year to share the written recipe on the blog. I have been super busy with a lot of things and the blog has taken the backseat

Anyway, since I didn’t want to delay it any longer I pulled out my notebook and wrote this recipe down. These kebabs melt in your mouth. They taste simply delicious. And the twist of adding the cheese to the marinade is something else. It is sure to win the hearts of little ones and those that do not prefer spicy kebabs. We have tried making these kebabs in the oven as well as the airfryer and both versions turn out just as great. If you like using the airfryer and prefer the smoky flavour that kebabs generally have then you can try placing a piece of coal in a small bowl inside the airfryer during the last 2 minutes or so. However, we do that step only for regular kebabs with a red chilli marination and leave the malai ones pristine, simple & creamy. I really hope you enjoy these kebabs. Chicken Malai Kebabs

Tender, juicy & delicious, these kebabs are easy to make and a hit as a party starter!

Ingredients

  • 2 chicken breasts
  • First marination:
  • salt to taste
  • 1 teaspoon ginger garlic paste
  • 1/2 teaspoon green chilli paste
  • 1/8 teaspoon nutmeg powder
  • 1/2 teaspoon pepper powder
  • juice of 1/2 lime
  • Second marination:
  • 2-3 tablespoons grated cheddar cheese
  • 1 teaspoon cornstarch (cornflour)
  • 1/2 teaspoon crushed cardamom seeds
  • 2 tablespoons fresh cream
  • Other ingredients:
  • Melted butter to baste the chicken

Instructions

  • Wash and pat the chicken dry. Cut them into thin slices, about 1/2 inch thick. Ensure that they are even in thickness. This will help with quick & even cooking.
  • Transfer the pieces to a bowl and add all the ingredients mentioned under 'First marination'. Mix well & marinate for 30 to 60 minutes.
  • After that apply the second marination to the chicken taking care to apply it to all the pieces well. Cover and keep aside for 2-3 hours.
  • When you are ready to grill the chicken, thread it through metal skewers, twisting each piece before piercing it through the skewer. The twist & thread technique ensures evenly cooked & juicy kebabs.
  • Place all the skewers on a baking tray so that the juices that dribble from the chicken are collected in the tray below. Baste the chicken with melted butter.
  • Bake in a preheated oven at 200 degrees C for 15 minutes. Switch to grill mode for the last 2 minutes to give the chicken a grilled/browned effect.
  • Remove from oven and serve the kebabs on a plate. Brush lightly with melted butter and serve with a fresh salad on the side or mint chutney on the side.

Notes

If you are using wooden skewers ensure that you soak them in water for 30 minutes before using, this is to prevent them from catching fire.
