
If you love a crispy rava dosa but want something more wholesome, then this Bajra Rava Dosa is just what your breakfast menu needs. Packed with the goodness of bajra (pearl millet) and the crispiness of rava (semolina) this dosa doubles up as a delicious, power packed and healthy choice for breakfast, tea time snack or a light dinner. Bajra is rich in fibre, iron and essential amino acids making it an ideal grain to incorporate into everyday meals – especially if you are looking to incorporate millets that are also diabetic friendly. The nuttiness of this millet comes out beautifully in the form of a classic rava dosa which is usually made with rice flour.
Honestly, during my growing up years, I had no idea that there was so much variety in the world of millets. The only one I knew about was ragi (finger millet) which again was a rare thing at my place, something that was mostly served to babies and people who needed to be nursed back to health. Now decades later and ever since we moved to Bangalore I find myself enjoying millets in various forms – either at restaurants or homes who lovingly prepare a wholesome meal using it. And then ofcourse, who can avoid the barrage of amazing millet recipes that we are hit with on social media? This recipe too was from an Instagram or YouTube I don’t recall but I had noted it down and tried it and my family was bowled over how delicious it was.

Coming back to the recipe, this batter comes together really quickly and does not require any fermentation making it an ideal breakfast option for lazy weekend mornings. However, do note that owing to the fact that millets generally take slightly longer to cook than rice or wheat, this dosa will take an extra minute or two to achieve that crispy, lace-like texture so patience is key. I would strongly recommend you to double this recipe because the first one may not come out great if the temperature of the griddle/tawa is not accurate. You want to keep it on a medium high flame – too low and it will take way too long to cook, too high and the base of the dosa will burn quickly leaving the surface gooey and uncooked so do make sure you heat the griddle and maintain the temperature throughout the process. You will be richly rewarded for your patience and extra effort, I promise.

Bajra Rava Dosa
Ingredients
- 1/2 cup bajra flour pearl millet
- 1 tablespoon rava semolina
- 1/2 tablespoon jeera cumin seeds
- 1 small onion finely chopped
- 1 green chilli finely chopped
- 1/2 teaspoon red chilli flakes
- 1/8 cup coriander leaves chopped
- 1-1/2 cups water
- Salt to taste
Instructions
- Mix all the ingredients except the water into a deep bowl.
- Add the water in parts and whisk to yield a thin batter free of lumps. Rava dosa batters are usually thinner than regular dosa batter so adjust the water if need be
- Heat a cast iron or non stick tawa on a low-medium flame and pour a ladleful of batter to cover the entire surface. Since the batter is thin it will leave gaps which you can fill up by adding extra batter
- Drizzle some oil along the edges and a few drops in the middle. Cover and cook on a low-medium heat (see notes) for 2-3 minutes or until the base has become golden brown
- Flip and cook on the other side. Each dosa can take between 3-5 minutes to crisp up properly but it is worth your patience
- When the dosa has cooked and turned firm, golden & crispy on both sides, fold it up into half or quarter and serve with chutney or sambar
Notes
- Let the heat be consistent as bajra or any other millets take longer to cook and you don’t want to yank up the heat and burn the dosa.
- This quantity of batter yields around 5-6 medium size dosas which is good enough for two people. However, since they are so tasty and take so long to make you may as well double the batter to be truly content 🙂
