A simple and quick raitha that can accompany any biryani or pulao

Ingredients
1medium sized cucumberpeeled & chopped
1small onionfinely chopped
1cupsthickset yogurt (curds)
1/4cupapprox water
1/2green chilli cut horizontally (adjust to taste)
Instructions
Place the chopped cucumbers & onions in a bowl.
Whisk the yogurt well and then add the water a little at a time till you get the desired consistency. Dip the chilli into the mixture and squeeze well, discard the skin. Add salt to taste
Pour the yogurt mixture into the bowl of cucumbers & onions and stir. Garnish with fresh coriander and serve
Notes
If you prefer, you can add the freshly chop onions and add them to the raitha just before you serve. Ideally don't keep the raitha with the onions in them for more than a few hours as the dish will smell strongly of onions. It is better to make a cucumber raitha first and add the onions freshly cut before every meal
You can add chopped tomatoes (remove the pulp and seeds before chopping)
Sparkle your raitha by sprinkling it with a little chat masala or roasted cumin powder before serving.
