Jamaican Banana Fritters
A quick fix snack to curb those hunger pangs! Served at tea time, these fritters make for a simple yet delicious snack for little ones!

- 1 very ripe banana
- 1/4 cup all purpose flour
- 2-3 teaspoons sugar
- 1/8 teaspoon nutmeg powder
- pinch of salt
- ghee or oil for frying
- caster or confectioner's icing sugar to serve
In a bowl mash the banana very well.
Add the sugar, all purpose flour, nutmeg powder & salt and give everything a good mix till you get a lump free batter
Heat the ghee or oil in a frying pan or skillet and drop tablespoonfuls of the batter.
Fry on a medium-high heat till golden brown on both sides.
Remove onto an absorbent kitchen tissue. Serve warm sprinkled with caster sugar
