Jamaican Banana Fritters

A quick fix snack to curb those hunger pangs! Served at tea time, these fritters make for a simple yet delicious snack for little ones!

Ingredients

  • 1 very ripe banana
  • 1/4 cup all purpose flour
  • 2-3 teaspoons sugar
  • 1/8 teaspoon nutmeg powder
  • pinch of salt
  • ghee or oil for frying
  • caster or confectioner's icing sugar to serve

Instructions

  • In a bowl mash the banana very well.
  • Add the sugar, all purpose flour, nutmeg powder & salt and give everything a good mix till you get a lump free batter
  • Heat the ghee or oil in a frying pan or skillet and drop tablespoonfuls of the batter.
  • Fry on a medium-high heat till golden brown on both sides.
  • Remove onto an absorbent kitchen tissue. Serve warm sprinkled with caster sugar
