Carrot Kosambari

Simple and refreshing carrot salad that is very popular in North Karnataka. Easy and quick to put together

Ingredients

  • 200 grams 1 medium-big carrot
  • 1 tablespoon grated coconut
  • 1/2 small green chilli minced (deseed if you wish to tone down the spice)
  • a few drops of lime juice
  • salt

For the seasoning

  • 1-2 teaspoons oil
  • 1/4 teaspoon mustard seeds
  • 4-5 curry leaves

Instructions

  • Wash the carrot, peel and grate it into a bowl. Add the grated coconut, minced green chilli, lime and salt to taste and give it a quick, gentle mix.
  • To prepare the seasoning, heat the oil in a smaller pan meant for seasoning. When the oil is hot, add the mustard seeds. When they stop spluttering add the curry leaves and fry them for a few seconds. Pour the seasoning over the prepared kosumbari. Serve immediately
