Simple and refreshing carrot salad that is very popular in North Karnataka. Easy and quick to put together

Ingredients
200grams1 medium-big carrot
1tablespoongrated coconut
1/2small green chilliminced (deseed if you wish to tone down the spice)
a few drops of lime juice
salt
For the seasoning
1-2teaspoonsoil
1/4teaspoonmustard seeds
4-5curry leaves
Instructions
Wash the carrot, peel and grate it into a bowl. Add the grated coconut, minced green chilli, lime and salt to taste and give it a quick, gentle mix.
To prepare the seasoning, heat the oil in a smaller pan meant for seasoning. When the oil is hot, add the mustard seeds. When they stop spluttering add the curry leaves and fry them for a few seconds. Pour the seasoning over the prepared kosumbari. Serve immediately
