Summer Surprise

Refreshing & cooling summer drink made from pineapple and mangoes

Ingredients

  • 1 cup (250ml) pineapple juice * see notes
  • 1 cup mango pulp * see notes
  • 1-2 tablespoons sugar or honey adjust to taste
  • 4-5 ice cubes crushed
  • Pineapple rings or wedges to decorate
  • Mint leaves to garnish

Instructions

  • Blend all pineapple juice and mango pulp together until there are no mango lumps remaining. Add sugar or honey to taste
  • Add the crushed ice cubes and pulse a couple of times and pour into serving glasses
  • Decorate with pineapple rings or wedges, mint leaves and serve immediately

Notes

1. You can use fresh pineapple juice that is available at most supermarkets - these have a 2-3 day shelf life (under refrigeration). Avoid using the ones that last upto 6 months (like Tropicana/Real Juice in India) as their flavour is masked. To make your own fresh pineapple juice blend 1-1/2 cups finely chopped pineapple with approx 1/2 cup of water. Strain and blend the chunky leftover pulp again and strain again. 
2. I used a medium size mango which yielded approx 1 cup of pulp
3. Depending on how tart the pineapple juice is you need to adjust the amount of sugar
4. When mangoes are not in season use 2 sliced bananas instead of mangoes
5. The original recipe asked for 1/2 cup of lime juice to be added but I felt it would make the drink too sour. If the pineapples and mangoes you are using are very sweet and you want to perk up the flavour you can go ahead and add the lime juice
