Tomato Garlic Chutney

Super yummy tomato chutney with garlic and dried chilli skins for that extra kick is a perfect accompaniment to dosa, idli, appam or even rice

Ingredients

  • 6-7 garlic cloves finely chopped
  • 1/4 cup spring onions chopped
  • 1 tbsp spring onion greens finely chopped
  • 2 dry red chillies soaked in a little water for about 10mins - this helps soften them up
  • 1 cup tomatoes finely chopped
  • 1 tbsp coriander finely chopped
  • 1 tsp oil I use olive oil
  • salt to taste

Instructions

  • Drain the soaked chillies and chop them finely
  • Heat the oil and saute the spring onion whites and garlic over a slow flame till they are lightly brown.
  • Add the chillies and salt & saute again
  • Add the tomatoes and cook for about 10 minutes over a slow flame till the tomatoes are soft and can be mashed slightly
  • Cool completely and then add the chopped coriander & spring onion greens, mix well & serve with Mini Soya Dosa
