Tomato Garlic Chutney
Super yummy tomato chutney with garlic and dried chilli skins for that extra kick is a perfect accompaniment to dosa, idli, appam or even rice

- 6-7 garlic cloves finely chopped
- 1/4 cup spring onions chopped
- 1 tbsp spring onion greens finely chopped
- 2 dry red chillies soaked in a little water for about 10mins - this helps soften them up
- 1 cup tomatoes finely chopped
- 1 tbsp coriander finely chopped
- 1 tsp oil I use olive oil
- salt to taste
Drain the soaked chillies and chop them finely
Heat the oil and saute the spring onion whites and garlic over a slow flame till they are lightly brown.
Add the chillies and salt & saute again
Add the tomatoes and cook for about 10 minutes over a slow flame till the tomatoes are soft and can be mashed slightly
Cool completely and then add the chopped coriander & spring onion greens, mix well & serve with Mini Soya Dosa
